How To Make The Most Delicious Fried Egg Of Your Life

It's a real art.

Before we begin, let's clarify something. This is a not just a sunny-side-up egg, it is a FRIED egg.

To me, the word FRIED means something. It means hot and fast. It means golden browned edges. It means crispy bits.

And in order to get those crispy bits, you will have best luck with a cast iron or nonstick skillet. You can use stainless-steel, of course, but your egg might stick.

So, let's get started:

1. Start by getting the skillet hot. Not screaming-crazy-hot, just hot. This means medium-high heat. Add a bit of canola oil and crack your egg right into the skillet.

It should start to sizzle and bubble almost immediately.

2. Add salt and pepper before the white is totally set.

3. Okay, now, DON'T touch it. Seriously, leave it alone for about 2 minutes while it bubbles and sizzles and pops and gets all wonderful and delicious.

4. Once the edges are browned and crispy, the white is almost 100% set, and while the yolk is still bright yellow and runny, remove the egg from the pan. A fish spatula is perfect here.
